Paddock to (under) Plate

Matt Moran's show on TV is all about the provenance of food and it's
journey to the plate.
The story behind our 'Signature Collection' is about the provenance of
wood and it's journey to being underneath the plate.
It's one of the things that makes me so passionate about what we do, I
absolutely love the whole concept of using wood that has grown out in
the paddocks within our local landscape, being exposed to the harsh
realities of the Australian climate for many hundreds of years, come to
the end of it's life, we then salvage it before it becomes
firewood and turned it into a stunning piece of furniture that
will be used and loved within someone's family for another hundred
years or so at least.
The second part of this story relates to the high level of uniqueness
that exists in timbers sourced this way. It's always a surprise package
when we receive a new pack of timber, sometimes a good surprise and on
the other hand, sometimes it isn't.
It would be true to say that uniqueness in food and wood come from the
same influences, it's all to do with the soil they grow in and the
climate they're exposed to.
